Koupes

This small delicacy, which resembles a croquette, is one of the classic foods from Cyprus. Actually intended as part of the meze platter, but they also taste great as a snack in between meals.

Recipe and ingredients for 25 koupes

Dough : 500 gr coarsely ground wheat, 100 ml lukewarm water, 1/2 tsp salt, 1 tbsp fine flour

Filling: 1 onion, 70 gr parsley, 1 pinch of salt, 1 tablespoon vegetable oil, 130 gr minced meat, pine nuts, 1 pinch of pepper.

Preparation : about three hours before cooking, put the wheat in a bowl, mix the lukewarm water with salt and drizzle over the wheat. Then sprinkle the flour over the mixture and leave it covered with a cloth for three hours.

Filling: fry the onion, minced meat and parsley with salt and pepper in a pan and drain the oil. Now knead the wheat dough and form small balls. Flatten them and put some filling on them. Now shape the dough balls like eggs and fry them in olive oil.
